The Canadian Bacon story
Around the turn of the last century (or as they say, "during the war years"), England had a pork shortage. They imported side bacon from Canada, smoked it and termed it "Wiltshire Sides" in England. Due to this event Canadian bacon was made famous. Over time the United States believed that Canadian bacon was smoked back bacon although true Canadian bacon is not smoked. Our Canadian product is classified by the USDA as uncooked Canadian bacon and is Canadian #1 peameal back bacon.

Peameal definition
During the war years, yellow peas were ground up into meal. Canadian bacon was rolled in this meal. This ensured better curing, shelf life and avoided bacterial problems. Over the years, this tradition was changed to cornmeal, due to the availability of corn.

What are Pork Loins, Boneless Pork Back and Pork Tenderloin?
Pork Loin is made up of two types of meat with a bone stuck in the middle (think of the last time you had a pork chop). The top piece (larger of the two) is Boneless Pork Back (what peameal bacon - REAL Canadian Bacon is made from, sometimes referred to as Back Bacon in Canada). The lower piece is the Pork Tenderloin.

Quality shipping methods
the REAL Canadian Bacon Co. uses quality shipping agents like United Parcel Service and Federal Express. We strive to maintain the lowest costs available. Three basic methods of shipping are available:

  • Standard Delivery - Your order will arrive in 7 business days or less from the date we receive your order. This economical method helps lower shipping costs by allowing us to sequence orders in the early days of the week. That way, orders can make it to far distances by Friday. We recommend Standard Delivery.
  • Expedited Delivery - Delivery in 2-3 business days. Shipments are sent out Monday through Wednesday, after that they are held until the next week.
  • Priority One Service - Next business day delivery of your order. Shipments are made Monday through Thursday, after that they are held until the next week.

Delivery is available within the United States only. Please see our shipping page for a more complete definition of shipping schedules, methods and policies. Product may arrive slightly thawed or even fully thawed, although very cool to touch, depending on your shipping selection. Don't be alarmed…see "Shelf life" below for further information.

Shelf life
REAL Canadian Bacon can be kept frozen in excess of 12 months. Upon thawing, it is good for 1-2 weeks in the refrigerator. If thawing has occurred during shipment and product is cool to the touch (reject if warm, though we haven't had one yet!), you can do one of two things:

  • Cook and enjoy!
  • Refreeze (this is a salt cured pork product) and keep frozen for 12 months.

A quick primer on how to prepare

Sliced: Grill at 350°F for 1-2 minutes each side, or barbecue 2-3 minutes over medium heat.
Whole: Bake/Roast - apply coating (see recipes) then place on rack in covered roaster, add ½ cup of water (or your favorite beverage). Cook at 350°F until internal temperature is 160°F (about 1½ hours).
Uses: Breakfast
   Eggs Benedict, sliced with eggs, or simply served as a breakfast meat.
Lunch
   Burgers, club sandwiches, BLTs, Caesar salad
Dinner
   Roasts, salads, pizzas and pastas
